If you know me at all, you know I LOVE all things chocolate. In an effort to be healthy I try to limit sugar and artificial ingredients. I was thrilled to come up with this delicious chocolate pudding alternative. This recipe makes 2 servings allowing me to store one in the refrigerator for up to 3 days to enjoy later.
INGREDIENTS:
1 medium ripe avocado
2 tablespoons raw cacao powder (or cocoa powder)
2 tablespoons coconut flower nectar (or Honey)
1 teaspoon vanilla extract
DIRECTIONS:
Remove the peel and pit from the avocado and cut the fruit into 1 inch chunks. Place the avocado chunks and all of the remaining ingredients into a mini food processor or magic bullet blender. Mix until everything is combined and a creamy texture. Enjoy immediately or refrigerate for up to 3 days.
