My local grocery store used to have a counter when you first walked in that made up prepared salads, veggies and fruit trays. I loved to stop and pick up a yogurt Parfait as they called it. The ladies at this kiosk soon got to know me for my regular stops and I’m pretty sure they started to make special parfaits just for me. With extra fruit stuffed into the container. Sadly, I walked into the store one day and my beloved kiosk was no more.
I had to start making my own parfaits at home. It wasn’t the same but here is my remake of my parfait addiction. Make this the night before and in the morning the oats will have softened enough so that you have a ready made breakfast that you can grab and eat on the run.
Directions + Ingredients
- In a 2 cup (1 pint) mason jar
- ½ cup Granola
- 1 scoop Protein Powder
- ½ cup Vanilla Greek yogurt
- Stir to mix.
- Top with sliced strawberries.
- Put the lid on the mason jar and store in the fridge overnight.
