Spring is Birthday season in our household. We seem to celebrate a birthday every month from Feb to May. One of the favourite requests is my Ice Cream Cake. Since we no longer have a Dairy Queen in our small town I needed to get creative when a birthday request came in for an ice cream cake. It needed to have a crumb crust and of course it would not be an ice cream cake without the decadent fudge layer. The recipe I created was a success and is now a regular birthday tradition in our home. This recipe is fun because there are so many different options to choose from when it comes to ice cream flavours, sauces, and cookie chunks. You can make it different each time you make it. Our favourite ice cream combination is chocolate and strawberry. This is a good recipe to make at least a day at or 2 ahead of time as there are a few steps and multiple freezing times between layers.
You will need a Spring Form Pan
Crumb Crust Layer
Mix the following ingredients together and press into a spring form pan.
Freeze slightly
1 1/3 Cup Chocolate Oreo Wafer Crumbs
1/3 Cup Melted Butter
Fudge Layer
8 Squares Semi-Sweet Chocolate
½ Cup Butter
1 Tbsp. Hot Brewed Coffee
2 Eggs Separated
¾ Cups icing sugar
Melt chocolate squares with butter in a double boiler over medium heat. Stirring until smooth. Remove from heat.
In a medium bowl beat egg yolks with coffee and icing sugar until fluffy.
Pour in melted chocolate and mix well.
In a small bowl beat egg whites until stiff. Fold into chocolate mixture.
Pour over crust and freeze approximately 2 hours
Ice Cream Layer 1
Your choice of ice cream flavour
Thaw slightly so you can spoon and spread over the fudge layer
Chocolate chip, Chocolate, Vanilla, Strawberry, Cookies and cream, mint chocolate chip. The choices are endless.
Freeze until firm. Approximately 2 hours
Middle
Your choice of Cookie chunks. Approximately 10 cookies.
Oreo, Chocolate Chip, Double Chocolate Fudge, Brownie Chunks
Break up whatever cookie choice you choose and sprinkle over the ice cream layer 1
Drizzle your choice of caramel, strawberry or caramel sauce over the broken cookies
Ice Cream Layer 2
Your choice of ice cream flavour. Choose something different from layer 1
Thaw slightly so you can spoon and spread over the cookie and sauce layer.
Freeze for 2 hours.
Chocolate icing topping
Hard Turtle shell ice cream topping works great
or you can make the following icing:
4 Squares Semi-Sweet chocolate
3 Tbsp. butter
1 Tbsp. corn syrup
Melt all three ingredients together until melted and smooth.
Spread over the top of the last ice cream layer.
You can garnish with cookie crumbs.
Freeze at least 3 hours or overnight.
