Beef Fajitas

One of my favourite types of food is Mexican. I love food with flavour and the Mexicans sure know how to add zing to their dishes. I was actually in Mexico the first time I ever tasted a fajita. I remember at the time thinking it was one of the best things I had ever eaten. The fast food and boxed renditions at home didn’t even come close to what I had experienced while on vacation.  While this recipe doesn’t do a true Mexican fajita justice it will suffice until I am able to go back to visit that beautiful country and once again experience the real deal.

Bag 1 Medium freezer bag

2 lb. beef stir fry strips

BAG 2 small freezer bag

1/4 cup diced onion

Bag 3 Small freezer bag

Seasoning-

1tsp chili powder

1 tsp onion powder

1 tsp garlic powder

1/2 tsp red pepper flakes

1/2 tsp oregano

1Tbsp Paprika

BAG 4 medium sized freezer bag

3/4 Cup salsa

BAG 5

1 Cup shredded cheddar cheese

BAG 6 large Freezer bag labeled with recipe name and cooking directions

Place bags 1 – 5 inside bag 3

Lay flat to freeze. Once frozen you can re arrange in the freezer.

 

Directions:

YOU WILL NEED TORTILLA WRAPS

Thaw over night in the fridge

In a large skillet, over medium heat,  Stir fry beef and spices from bags 1,2&3

Add 1/4 cup water as cooking to keep it from getting too dry.

Stir fry until tender and cooked through. Approx. 7-10 min

Serve on a soft  tortilla  wrap with cheese and salsa from bags 4&5

Additional toppings: fresh lettuce, sour cream, avocado and lime juice.
