April Fools Day Supper

When my kids were young they LOVED when I would make them a crazy, backwards, mixed up April Fools Supper.  It’s a meal that messes with both your mind and your taste buds.

Brownies, and Ice Cream for the main course.  Accompanied with a Milkshake to wash it all down.  Every meal needs a dessert, right?!?  So how about spaghetti and meatballs to finish this crazy meal off?

But wait… Is that really a brownie?  This Milkshake doesn’t taste quite right.  APRIL FOOLS!!! Those mini brownies are really meatloaf cooked in a mini muffin tin. The milkshake is actually Cauliflower Soup. That ice cream isn’t even ice cream at all. It’s a scoop of mashed potatoes. And well, sorry to disappoint you if you were expecting pasta. But that plate of spaghetti and meatballs is a vanilla cake covered in piped icing to look like spaghetti noodles. Topped off with strawberry jam and malted milk balls. Bon Appetite!

 

Mini Brownie Bites (Meatloaf)

  • 1.5lb Ground Beef
  • 1 Egg
  • ¼ Cup Diced Onion
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 1 Cup Panko Crumbs
  • ¼ cup Ketchup
  • ½ Cup Rice milk

Mix all Ingredients in a medium sized bowl.

Press into a mini Muffin tin.

Bake 350 degrees F for 20-25 minutes – until cooked through

 

 

Milk Shake (Cauliflower Soup)

  •  ¼ Cup Diced Onion
  • 2 Cloves Garlic
  • 1 Large Head Cauliflower- washed and cut
  • 1 Cup Chicken Broth
  • 1 Cup Rice Milk
  • ½ tsp Salt
  • ¼ tsp Pepper

Place all ingredients in a large Saucepan heat.

Bring to a boil and simmer for 20 minutes or until the Cauliflower is soft.

Puree in a blender until smooth and creamy.

Serve in Milkshake glasses with a straw.

 

 

Vanilla Ice Cream (Mashed Potatoes) 

  •  6 Medium Sized White Potatoes
  • ¼ Cup Rice Milk
  • ¼ Cup Butter
  • ½ tsp Salt

Peel Potatoes and dice into ¼ inch cubes.

Boil for 30 minutes in a medium sized pot of boiling water or until the potatoes are soft

Drain water from potatoes.

In the pot mash potatoes with a potato masher.

Add the remaining ingredients.

Mash until creamy smooth.

Use an ice cream scoop to serve in an ice cream dish.

 

 

Spaghetti and Meatballs (Cake)

CAKE:

  • 1 Box Vanilla Cake mix.
  • Vanilla Frosting
  • 1 pkg. Malted Milk Balls
  • 1 jar Strawberry jam

Make the cake according to the package directions.

You will only need one layer baked in a round cake pan.

 

FROSTING:

Betty Crockers Vanilla Buttercream Frosting

  •  3 Cups Powdered Icing Sugar
  • 1/3 Cup Butter, softened
  • 1 ½ tsp Vanilla
  • 1 to 2 TBPS Milk

 

In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar.

Put the Frosting in a piping bag with a small, round tip. Pipe randomly over cake to look like Spaghetti noodles until the cake can no longer be seen underneath.

Spoon Strawberry Jam over the top to look like Pasta sauce.

Randomly place malted milk balls over the top to look like meatballs.
