Vegetable Beef Soup

This soup cooks up wonderfully in a crockpot. It is so nice to come home after a busy day to the smell of this soup in the air. If it’s a hectic night where you cannot sit down as a family to eat it’s a great way for everyone to serve themselves on their own time schedule. It’s a time saver for a few reasons. It makes up very quickly into bulk freezer meals. Just thaw in the fridge overnight and dump into the crockpot in the morning. Because who honestly has time to wash, cut and chop veggies in the morning when you’re trying to feed the dog, get kids dressed and out the door to school and yourself to work without looking like you just crawled out of bed? To create this meal with less effort opt for canned cubed potatoes and carrots. If you would rather not freeze potatoes than leave them out until you go to cook the soup. Remember if you have kept chopped onions and cooked ground beef as staples in your freezer you just saved yourself a couple steps.

Directions

  • Large Freezer bag
  • 1 lb Cooked Ground Beef
  • 1/3 Cup Chopped Onion
  • 14oz Beef Broth
  • 1 Can Diced Tomatoes
  • 1 Cup Cubed Peeled Potatoes
  • 3/4 Cup Chopped Carrot
  • 1/2 Cup Water
  • 1 Clove Garlic
  • 1 TSP Italian Seasoning
  • 1/8 TSP Pepper

Cooking Directions

  1. Thaw overnight in the fridge. Be sure to set it in a container in case of leakage
  2. Empty contents of bag in to a crockpot. Heat in crockpot 4-6 hours on low
