CHEESY CHICKEN

As the cooler weather starts to come upon us once again we will be looking for those seasonal comfort foods. This is definitely one of those recipes.

It makes up quickly and will be a hit with all members of the family. My family enjoys it served over spaghetti noodles.  For those who do not like to cook with condensed canned soups, I have included the link to my homemade alternative.

BAG 1– Medium Freezer bag

Place 2lbs boneless chicken breast (cubed) in freezer bag 1

BAG 2– Medium Freezer bag 

Place the following ingredients in Bag 2

1 Cup Chopped Green Peppers

¼ Cup Onion

2 Cups shredded cheddar

½ cup Grated Parmesan Cheese

¾ Cup Cottage Cheese

1can Cream of chicken soup (a homemade replacement for condensed soup can be found HERE )

½ Cup chicken broth

½ tsp basil

1/4 tsp oregano

BAG 3 – Large Freezer Bag – Label with recipe name and cooking Directions

Place bag 1&2 inside large labelled Freezer bag

 

COOKING DIRECTIONS

Oven :  place contents of all bags in baking dish.  Bake 350 degrees F -40 min

Crockpot:  place contents of all bags inside crockpot

Low 6-8 hours

High 4-5 hours

Serving suggestions: on rice, spaghetti noodles or mashed potatoes, with green beans or a salad
