Lunchbox Pizza Muffins

These muffins are perfect when you are in a rush and need a quick grab and go lunch for the kids.  They are my sons favourite go to school lunch option.  I bag 2 muffins per sandwich baggie to freeze. When my son packs his lunch all he has to do is take the pre-bagged pizza muffins from the freezer to put into his lunch bag. Its quick and easy and is always thawed by the time lunch break arrives. I bake a double batch at a time which lasts about a month.

Recipe:

2 Cups Spelt Flour

¼ Cup Sugar

1 Tbsp. Baking Powder

1 tsp. Salt

½ tsp. Baking Soda

1 Cup small Cubes of Cheese

1/2 Cup Diced Pepperoni or Ham

1 Cup Sour Cream

2 Eggs

¼ Cup Melted Butter

1/2 Cup Pizza Sauce

Directions:

Preheat oven to 400 F.  Grease muffin tin. With a kitchen aid mixer combine flour, sugar, baking powder, salt, and baking soda. Slowly mix in cheese cubes.  While mixing slowly add, sour cream, eggs and melted butter. Spoon batter into muffin tin.  Place a spoon full of pizza sauce on top of each muffin. Bake about 20 minutes, until golden brown or when a toothpick inserted in the center of one of middle muffins comes out clean. Let muffins cool in pan before removing.
