Mini Quiche

These mini quiche are great to send in the kids lunches or to have on hand for appetizers to take to that last minute party.  I make them up ahead of time and freeze them.  Freeze them in an air tight container. I layer with wax paper between.


  • 4 eggs, lightly beaten
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced Onion
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 24 mini pie crusts


Preheat oven to 375 degrees F

Whisk together eggs, milk, slat and pepper

Stir in onion, ham and cheese

Pour into mini pie crusts

Bake 375 degrees for 25-30 minutes until the egg is set
