A smoothie is something I really enjoy at breakfast or as a mid day snack. Like many people, I enjoy all things pumpkin spice. What I don’t like is all the extra added sugar and artificially flavoured syrups. This smoothie reminds me of my grandmas Pumpkin Pie. A great thing about this recipe is you can make it in bulk and freeze it in individual portions.
1 1/2 cups unsweetened coconut milk beverage
1 1/2 cups pumpkin puree
1/2 cup full fat canned coconut milk
1 teaspoon vanilla
2 drops vanilla liquid monkfruit extract to sweeten (I use Lakanto)
1 teaspoon pumpkin pie spice
Combine all ingredients in an electric blender. Enjoy immediately, or seal in an airtight container to freeze. This smoothie will freeze well for up to 3 months. Defrost in the fridge overnight.
